Baked Lemon Tilapia and Broccoli
Tuesdays are known as "Seafood Day" in my household. Every Tuesday my husband and I plan to cook and incorporate seafood into our main meal for the day (usually dinner with extra for leftovers). One of our favorite seafood dishes is baked lemon tilapia served with oven-roasted broccoli. This dish can be served with almost anything: baked potatoes, sweet potatoes, rice, quinoa, and even mashed potatoes. We've done it all and it's a perfect dish for me to prep and cook when I get home after work.
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Ingredients:
- 4 tilapia fillets
- 1 head of broccoli
- 1 small lemon
- olive oil
- salt and pepper
Directions:
- Preset the oven to 375 degrees F. Grease a 9x13 inch pan or oven safe dish (I spray with olive oil).
- Chop up the head of broccoli to bite size pieces. Pour a little olive oil with salt and pepper into a bowl with a lid. Add the chopped broccoli. Shake to mix.
- Place tilapia on the center of the pan, squeezing the lemon juice on top. Add the broccoli around the outside edges.
- Bake 20-25 minutes (or until tilapia is fully cooked).
If you'd like to get fancy with it, add some extra seasoning to it! Basil works well with this type of dish, as well as onion, garlic, and parsley - fresh ingredients or seasonings both work just fine.
